(More customer reviews)Have never gotten it sharpened, and just give it a quick treatment with the honing steal before and after use. It's still sharp enough to cut a finger off, if you are not paying attention. The blade does flex and this may be somewhat of an advantage when carving poultry. The tip has bent so keep in mind this is a carver, rather than having the heft of a chef's knife. I have the filet knife, paring knife and honing steel in this set. I really have no complaints about any of the Henckels 4-star line.
