I paid $420 for the set with an on-line coupon and felt for $120 more than the Gourmet set, I would get the best traditional handle set of knives Henckels offered. Most know, these knives are German made and the Professional S series offers the best material and forging Henckels offers. The set comes with a video that is helpful and the block allows room for a few additional knives if you choose. These knives are GREAT! Sharp, easy to hold, easy to cut with, and with this set, you have so many options. I was sick of buying cheaper knives and working so hard to prepare food. These knives make it fun to cut because they are so easy to work with.

(More customer reviews)I have been in love with these knifes since the day I first purchased them and for good reason. Each knife is well balanced and heavy. The Ergonomic, polypropylene handles feel good and well proportioned to my hand. The blades are sharp and have done a good job at staying sharp.
* 5 inch - Santoku Knife
Great chopping knife for mincing, slicing and cutting through bones like nothing. I use this as an all purpose knife. I'm thinking about buying another because I love it so much. I have used the santoku knife to cut through raw chicken bone like it's nothing. Even after a good deal of abuse, the blade of the santoku knife is a little chipped and worn but still does an amazing job of cutting.
* 8-inch chef's knife
I use it to cut through large heads of vegetables. It long enough to cut through a cabbage head easily and with little effort. Can slice a tomato easily without squishing it.
* 5-inch serrated utility
Great for cutting through bread and hard crust.
* 4-inch paring
Good for peeling carrots, skin of tomato and other small jobs
* 2-3/4-inch paring/boning
Good for cutting meat and meat from bones.
* Kitchen Shears
So very useful. I use it from cutting open packages to even cutting up herbs.

(More customer reviews)I bought these knives for my first-time homeowner son, as a housewarming gift, because I had accumulated a number of the 4-star knives for myself.
As I told my son the musician -- a good knife is like a musical instrument, you have to keep it "in tune" (sharpened) for it to work at its best. A good, sharpened knife can be poetry in motion, for those who like to cook. But it has to be sharpened to stay like that -- otherwise, the "never need sharpening" knives would be a better choice. I run my knives through a two-wheel manual sharpener about every 2 or 3 times I use them. I use an electrical knife sharpener about once or twice a year.
The handles on the 4-star can discolor (whiten) if regularly washing in a dishwasher with powdered detergent. I usually wash mine manually, but I will put them in a top rack occasionally, and I use a gel detergent.
This is a great set of knives for those who don't mind sharpening frequently. I hang mine on a magnetic knife holder, I don't care for a block on the countertop. I am a bit envious -- there is a Santoku knife in this set that I don't have. Because I have small hands, I use the 6" chef knife instead of the 8". I have the 3" paring knife; the 4" would be a good addition to my set.

Any two of the knives would cost more than that so you have to ask yourself if you really want all of these or not. If you don't believe you would use them all, it probably makes more sense to buy the ones you want most separately and put together your own set. Another consideration is whether these are the knives you want most. I wanted the J.A. Henckels Twin Cuisine 7-Inch Fillet Knife, for example, but not the 7" Hollow-Edge Santoku included here.
There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try them once and you'll be hooked on Twin Cuisine for good. But look closely at your buying options and whether or not this set is the best way to buy into the series. There are smaller sets for less money as well as individual pieces. It's a significant investment and worth spending the time to make certain you get the most for your money.

But, I use the mid-shank-curve type forks for most of my cooking, and this thing is not the same, its perfectly straight. Kind of awkward to hold a piece of meat with the same kind of leverage, maybe its just me, plus its "elegant" look makes it a dainty tool, and doesn't feel sturdy. If you want a BBQ/utility fork, this is NOT the one. This is a turkey carving fork.

These knives are X30Cr13 stainless steel, the same steel used in many high-quality chef knives, and it is decidedly NOT carbon steel.
If you honestly believe that stainless steel means it will never stain, you should likely drop out of culinary school and choose a vocation where you won't be exposed to such illogical concepts.
Stainless steel doesn't develop the patina that carbon steel does, and cannot be sharpened to the same razor edge. It stays brighter and is easier to clean, but can definitely stain or discolor with use.
These knives are an excellent bargain - I'll be using them as a Christmas gift, myself. I may even get several sets, depending on who needs them. :)
