I paid $420 for the set with an on-line coupon and felt for $120 more than the Gourmet set, I would get the best traditional handle set of knives Henckels offered. Most know, these knives are German made and the Professional S series offers the best material and forging Henckels offers. The set comes with a video that is helpful and the block allows room for a few additional knives if you choose. These knives are GREAT! Sharp, easy to hold, easy to cut with, and with this set, you have so many options. I was sick of buying cheaper knives and working so hard to prepare food. These knives make it fun to cut because they are so easy to work with.

The Ergonomic, polypropylene handles feel good and well proportioned to my hand. The blades are sharp and have done a good job at staying sharp.
* 5 inch - Santoku Knife
Great chopping knife for mincing, slicing and cutting through bones like nothing. I use this as an all purpose knife. I'm thinking about buying another because I love it so much. I have used the santoku knife to cut through raw chicken bone like it's nothing. Even after a good deal of abuse, the blade of the santoku knife is a little chipped and worn but still does an amazing job of cutting.
* 8-inch chef's knife
I use it to cut through large heads of vegetables. It long enough to cut through a cabbage head easily and with little effort. Can slice a tomato easily without squishing it.
* 5-inch serrated utility
Great for cutting through bread and hard crust.
* 4-inch paring
Good for peeling carrots, skin of tomato and other small jobs
* 2-3/4-inch paring/boning
Good for cutting meat and meat from bones.
* Kitchen Shears
So very useful. I use it from cutting open packages to even cutting up herbs.

(More customer reviews)I bought these knives for my first-time homeowner son, as a housewarming gift, because I had accumulated a number of the 4-star knives for myself.
As I told my son the musician -- a good knife is like a musical instrument, you have to keep it "in tune" (sharpened) for it to work at its best. A good, sharpened knife can be poetry in motion, for those who like to cook. But it has to be sharpened to stay like that -- otherwise, the "never need sharpening" knives would be a better choice. I run my knives through a two-wheel manual sharpener about every 2 or 3 times I use them. I use an electrical knife sharpener about once or twice a year.
The handles on the 4-star can discolor (whiten) if regularly washing in a dishwasher with powdered detergent. I usually wash mine manually, but I will put them in a top rack occasionally, and I use a gel detergent.
This is a great set of knives for those who don't mind sharpening frequently. I hang mine on a magnetic knife holder, I don't care for a block on the countertop. I am a bit envious -- there is a Santoku knife in this set that I don't have. Because I have small hands, I use the 6" chef knife instead of the 8". I have the 3" paring knife; the 4" would be a good addition to my set.

But, I use the mid-shank-curve type forks for most of my cooking, and this thing is not the same, its perfectly straight. Kind of awkward to hold a piece of meat with the same kind of leverage, maybe its just me, plus its "elegant" look makes it a dainty tool, and doesn't feel sturdy. If you want a BBQ/utility fork, this is NOT the one. This is a turkey carving fork.

They were also incredibly sharp right out of the box, any attempt at sharpening on my part would likely have led to dulling the cutting edge! The larger knive is perfect for every day slicing and dicing of vegetables. It's also good for taking thin slices from small pieces of meat. The smaller one came in handy for peeling potatoes and apples as part of preparing Thanksgiving dinner.

Could not be any happier with them. Felt guilty at first for buying myself something a couple of months before Christmas, but I rationalized that with all the cooking I'll be doing, I'll be far better off. The are amazing. The rubber-like grip makes for steady handling. They are weighted perfectly. Comes with a great sharpener, as well as super simple instructions on how to care for them. (Who knew you are really supposed to sharpen them after each use! Takes two seconds, and will keep them like new forever!) Anyway, I'm still rambling. But I'm just so happy with them. And I love the santoku knife! The block looks great, too.

(More customer reviews)I purchased these knives after having purchased and returned mundial steak knives that had great blades, but the black plastic handles faded after only one hand washing. These knives have serrated blades and are fine for cutting steak on a plate, and I don't think I would want steak knives to be any sharper than what these are, because if so, they would damage my dinner plates. You aren't supposed to wash them in the dishwasher, but I have several times now and they came through as good as new. The rose wood box is nothing special, but it's okay. Overall, for the price, I'm quite happy with these knives.

(More customer reviews)Got my Pro "S" 7pc. set for Christmas and haven't looked back. In the course of researching the 4- and 5-star and Pro "S" knives, I was informed that the only difference is the handle material. The Pro "S" is the same as the 4-star with a more durable material for the handle. At an additional $20 cost for the whole set, it seemed worth it.
Anyhow, these knives make short, EASY work of anything. I love the paring knife...cloves of garlic submit from a mile away, slicing small things is like cutting through a cloud.
The chef's knife is fantastic. I was a little miffed when I read that the 4-star set had the Santoku, but I'm not terrribly worried. For chopping "billowy" stuff like cilantro bunches, etc., the pronounced "rocking" action of the chef's knife is clearly preferable to me.
The boning knife does it's job well and I prefer it for butterflying steaks, chops, cutlets, etc.
The utility knife does a fine job on tomatoes, bagels, etc.
The scissors I haven't used much yet...not sure what to use it for besides snipping the string off of butcher packages. They are silky smooth to use, though.
All in all, I am very happy I have this set. My sisters have the $60-ish Fine Edge Henckels International set which is terrible...they HAVE been using it on a GLASS cutting board (!) but really they ought to perform better than the pulling and ripping I had to do last night with some red peppers.
These knives are FAR AND AWAY in a different league than those and I couldn't be happier. Got my Polypropylene cutting board and I am off to the races.
